Beer Chili

OMG I met a girl in Alaska that I quickly hit it off with and we became really good friends. She introduced me to Beer Chili! Its the best chili ever!


Fry up some Ground Turkey - 2 pounds
Fry up some Sweet Italian Sausage - 1 package or 6 links
Add some Onions to the meat and cook a little
2 Large cans of Tomato Soup - add to meat (keep cans)
Fill the empty soup cans with Chicken Broth - add to meat
Fill the empty soup cans again with Miller Lite Beer - add to meat
Drink a Beer :)
2 cans of Red Kidney Beans
Add Chili Powder to taste & thicken to desired consistency!

I make a pan of cornbread to eat with my chili and I promise you there will be no leftovers! Enjoy!!

I am all about easy things to cook for my kids to eat, that is also healthy. This is another favorite in our house and I have to say it is beyond easy, delicious and hearty. I buy two packages of turkey polska kielbasa, a bag of new potatoes, and a bunch of fresh green beans. I slice the kielbasa into little circles and after spraying my pressure cooker with oil I place the meat into the bottom of the cooker. Afterwards I wash the new potatoes and place them on top of the meat, then I wash the green beans and place them on top of the potatoes. So the meal is layered, only one pot to wash and you have your meat, potatoes, and vegetables. I do add a little water and then sprinkle with salt and pepper and turn the pressure cooker on and it's done and ready to eat in a matter of minutes! We had this for dinner tonight and its makes me feel oh so good! Enjoy!!

Bringing in the New Year Healthy

 
 
We are now approaching the end of January of the New Year and like many others I made a resolution to try to eat healthier. I purchased this Perfect Tortilla Pan Set for my husband for Christmas and we have switched to chicken and turkey for a really healthy alternative rather than eating beef and pork. I cook the ground turkey or shredded chicken with some onions and cut up jalapenos and add some taco seasoning while it is browning. I also cut up some avocados, cilantro, tomatoes, lettuce, japalenos, add shredded cheese, and some light sour cream. I put the meat in the tortilla after it comes out of the oven - it's perfect by the way, add the toppings and then I make some spanish rice on the side and beans for a rather delicious dinner. We alternate days with the meat. One day we have ground turkey, the next day we do the shredded chicken and we have even tried rotisserie chicken. The greatest thing of all ~ my kids and my hubby absolutely love it and can't wait for dinner time. And I have to say that my tummy is feeling better with this healthier eating also! Enjoy!!

Bourban Chicken

Recently while roaming around on Pinterest I came across this recipe called Bourban Chicken. It has since became one of my families favorites and above all else it is EASY! My kids never tire of this recipe and they ask for it all the time. In my kitchen it is a success! Enjoy!!

2 lbs of chicken breast cut into bite size pieces
1 tbsp olive oil
1 garlic glove crushed
1/4 tsp ginger
3/4 tsp crushed red pepper
1/4 cup apple juice
1/3 cup brown sugar
2 tbsp ketchup
1 tbsp cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tbsp cornstarch to thicken

Saute chicken in olive oil until cooked. Set aside. Mix the rest of the ingredients in a skillet then add cooked chicken and let cook for 15 minutes! Serve over rice with a side of asparugus etc. It is absolutely delicious!
