Best Meat Loaf Ever!



Everyone in our house is missing my mom this holiday season and my husband is really missing her meat loaf so I called her and got her recipe! Best meat loaf Ever!

2 pounds hamburger meat
2 bell peppers (diced into small pieces)
onion (diced into small pieces)
black pepper
2 eggs
1 roll of ritz crackers
2/3 can of carnation pet milk

topping:
1 cup ketchup
2/3 cup brown sugar
2 tbsp mustard
2 tbsp honey

Preheat oven to 375 degrees. Mix all ingredients for meat loaf in a bowl, grease a pan, add meat loaf and pop it in the oven. Cook for 2 hours. When meat loaf is done, mix the ingredients for the topping and add mixture to the top of the meat loaf and put back it back in the oven for 10 minutes!
Enjoy with a side of mashed potatoes and a vegetable!

Bite Size Apple Minis



Four to six apples peeled and diced into cubes.
(boil apples in water with 1/2 cup sugar, 2 tsp cinnamon) until tender
Drain apples and set aside.
Roll out crescent rolls on a sheet and brush with melted butter.
Add cooked apples, and sprinkle with brown sugar and cinnamon.
Roll apples, and brown sugar and cinnamon into individual pieces of dough.
Brush top with butter and sprinkle brown sugar and cinnamon mixture on top.
Bake at 375 degrees until golden brown. Filling will be hot. Serve alone or with a dallop of Vanilla Ice Cream.

Chocolate Centered Candy Canes

 
These are one of my favorite simple Christmas treats. A perfect addition to a plate of Christmas cookies, and so simple. They are a project the kids can help with too.

You’ll need…
A box of mini candy canes
Semi-sweet Chocolate morsels
Crushed candy canes or sprinkles of your choice

~Directions ~
1. Place waxed paper or a Silpat type liner on a baking sheet.
2. Lay two mini candy canes next to each other, creating a heart. Continue filling the baking sheet with heart shapes. Stick in a 200 degree oven for 10 minutes allowing the candy to mold together making a heart.
3. Melt the semi-sweet chocolates, using short intervals in the microwave, or in a double boiler.
4. After 10 minutes and the candy is molded together and when the chocolates are melted, spoon or pour into a piping bag or thicker ziplock type bag. Cut off a tiny tip from the bag, and begin filling in the heart shapes with chocolate. 
5. After adding the chocolate, top with the crushed candy canes or sprinkles of your choice.
6. Set the baking sheet (of chocolate filled hearts) in a cool place while the chocolate cools. Once cool, remove hearts from baking sheet and store in an airtight container.

Goulash Recipe

Ingredients

  • 2 pounds lean ground beef
  • 1 pound ground turkey or ground Caribou
  • 2 large onions, chopped
  • 3 cups water
  • 1 (29-ounce) can tomato sauce
  • 2 (15-ounce) cans diced tomatoes (tomato, garlic & basil)
  • 3 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 3 bay leaves
  • 3 tablespoons soy sauce
  • 1 tablespoon seasoned salt
  • 2 cups dried elbow macaroni

Directions

In a Dutch oven, saute the ground beef and ground turkey or Caribou over medium-high heat, until no pink remains. Break up meat while sauteing; spoon off any grease. Add the onions to the pot and saute until they are tender about 5 minutes. Add 3 cups water, along with the tomato sauce, tomatoes, garlic, Italian seasoning, bay leaves, soy sauce, and seasoned salt. Stir well. Place a lid on the pot and allow this to cook for 20 to 25 minutes.
Add the elbow macaroni, stir well, return the lid to the pot, and simmer for about 20 minutes. Turn off the heat, remove the bay leaves and allow the mixture to sit about 30 minutes more before serving.

Dorothys Salmon Dip

It has been really cold here in Alaska and the holidays are here. Now is the time to relax, enjoy family and snack, snack, snack! While visiting the Kenai this summer I made a trip into Homer Spit with a friend and we visited the Bear Creek Winery. I fell in love with the place. They had a wonderful atmosphere, a very friendly staff, and the best wine that I have ever tasted. With the wine, they served different dips. I want to share with you the recipe that they passed along to me. Being in Alaska, Salmon is a must in the freezer. It is full of Omega 3 Fatty Acid, Vitamin B Complex and Vitamin B12. Enclosed in this post is "Dorothys Salmon Dip"! I love them with Captains Wafers, Ritz Crackers and wine of course! :) Enjoy!!

Crumble smoked salmon in a bowl. Mix in cream cheese, add some green onions (finely chopped), garlic powder, pepper, a dash of lemon juice, dash of liquid smoke, (dash of cayenne optional) and break out the crackers!

Getting in the Christmas Spirit!

This is my first official blog ever! :) Currently I reside in the great state of Alaska where I support my husband who is a member of the United States Army. I am blessed to be able to witness the beauty of Alaska. Today the current temperature here is -29 degrees. It was a great day to stay inside and catch up on some baking. I baked Banana Bread and made an Angel Food Cream Cheese Cherry Jubilee dessert that not only looks beautiful but it is easy and always a great hit at parties and gatherings! Attached is the recipe for the easiest Banana Bread ever and the dessert mentioned! Thanks for joining me today and God Bless!

Angel Food Cream Cheese Cherry Jubilee

1 Angel Food Cake
2 - 8 ounce packages of cream cheese (room temperature)
1/2 cup sugar
1/2 cup milk
1-16 ounce cool whip
2 cans cherry pie filling

Mix the cream cheese, sugar and milk in a mixing bowl. Add cool whip and mix thoroughly. Layer the bottom of a clear glass bowl with pieces of angel food cake, next the cream cheese mixture, then the cherry pie filling. Repeat and finish up with cherries on top! Refrigerate then serve. Enjoy!!
